Kencur Rice Instant Hedonic Test With Carbohydrate Source Manipulation In An Effort To Read Business Opportunities
Abstract
Instant is a processed food product in the form of powder, which is easy to serve just by dissolving the powder in water. The purpose of the study was to find out the extent of the feasibility of processed kencur into instant powder by manipulating carbohydrate sources in an effort to read business opportunities as herbal drinks. This study is a continuation of the results of previous research on the instant Hedonic Test of ginger with the substitution of natural dyes. The research method is a one-factor Complete Random Design (CRD) consisting of 4 treatments. The treatment is the manipulation of carbohydrate and spice sources, namely K1 = granulated sugar without spices; K2 = granulated sugar with spices; K3 = brown sugar with spices; and K4 = palm sugar with spices. The observation parameters are the color, aroma, taste, and texture of kencur rice instant products through the Hedonic Test. From the research of the Kencur Rice Hedonic Test, it can make a significant contribution to the development of business opportunities, especially in the field of herbal drinks. Hedonic testing not only helps create a better product, but also provides a scientific basis to support business decisions.
