Abstract

The purpose of this study is to utilize tofu waste so that it is expected to reduce waste
processing costs and minimize liquid waste in water bodies around the tofu making
industry. The research was carried out using the variables of the relationship between nata
weight, thickness, and water content of nata de soya which later the results of the nata will
be dried and used as raw materials for handicrafts. This research was conducted using the
fermentation method with a variable concentration of nitrogen sources. The best results
were obtained on the variable 0,4 grams with the results of dry nata weight 5,2 grams and
86% moisture content
